KathiesDessert2OK, I’ve been doing pretty well on my diet lately.  And I watch what’s going on on some of the various food blogs (see links on the right).  Well, I ran across Kathie’s Kabin and she’d posted a note about getting a couple of flameware pieces KathiesDessertfor Christmas from her dear husband, but being skittish about using them.  Well, I chided her into it, and low and behold the resulting dessert .  Rather than posting the whole recipe here, I’ve got to suggest taking a look for yourself.  But don’t say I didn’t warn you!

Pecan Toffee Bars

Shirley made these for part of dessert on our cassoulet night last Sunday.  They were a decoration for her Chocolate Amaretto cheesecake.  Oh My Goodness!

Melt 1 c butter
1 c brown sugar
1 c chopped pecans

Bring to boil for 3 mins. stirring constantly

Pour over graham crackers and bake at 350 for 9 min.

But 6 Hershey Bars on top and let melt, spread. Cool and cut.

I got this recipe from Terry Erickson, Hutchinson. She was so nice to share her recipe with me (twice, as misplaced it) She told me it is a simple, quick and yummy recipe. Terry’s seemed much better than mine, but just means I need to keep making them until I get it right. Thanks Terry

Cranberry-Apple Crisp

Apple Cranberry Crisp

This easy recipe is from Betsy’s daughter Morgan.

1 cup fresh cranberries

¼ cup sugar

4-5 apples Peeled and diced

¼ cup sugar

1 ½ cup rolled oats

1 teaspoon of cinnamon

Squirt of lime juice

2 table spoons flour

1 table spoon cinnamon

¼ cup sugar

3/4 stick of room temperature butter

1. First, put 1 cup of fresh cranberries, one cup of water and ¼ cup of sugar in a sauce pan and bring to a boil.
2. While the cranberries are coming to a boil, peel and chop up 4-5 apples. I prefer Honeycrisp (they are Minnesotan) but any apple you like is fine.
3. The put the apples in a big baking bowl (preferably a Clay Coyote bowl – they are oven safe you know) and sprinkle with ¼ cup sugar, 1 teaspoon of cinnamon and a squirt of lime juice if you have it.
4. When the berries have boiled (they will look a bit like mush – that’s ok) drain off the juice and pour the berries in with the apple mixture. Fold the apples and the berries together.
5. Then in a separate bowl (I must confess on this one I used a Mel Jacobson bowl) or baking dish combine together 1 ½ cup rolled oats, 2 table spoons flour, 1 table spoon cinnamon, ¼ cup sugar, and 3/4 stick of room temperature butter. Pour the mixture over the fruit and place in the oven at 350 for 45-50 minutes.

A recipe from my daughter Morgan. She is always coming up with something fun to try in the kitchen. Growing up, she would say she had the best dishes for a college student and now for a 26 year old…The green bowl is her “popcorn bowl” from when she went to the University of Wisconsin-River Falls and the two little ones are part of the set we designed epically for her last year.

When you are all done, it should look like this:
